    1 Pork Tenderloin (about 1 pound)
    3 cloves garlic, minced
    1 teaspoon extra-virgin olive oil
    1 tablespoon minced fresh rosemary or 1 teaspoon powdered
    1 tablespoon freshly ground pepper
    8 ounces sauerkraut


Place tenderloin fat side up on a wire rack in a shallow roasting pan. Mix garlic with olive oil; rub on roast. Combine rosemary and pepper; rub on roast. Insert meat thermometer horisontally so tip is in center of thickest part of pork. Roast, uncovered, at 325 degrees F for about 1 hour or untilthermometer registers 150 degrees F for rare, 160 degrees for medium or 170 degrees F for well-done. Serve with heated sauerkraut.
