Introduction

I have used instant mashed potatoes for a time-saver, but you can make your own to lessen the sodium and fat. I have used instant mashed potatoes for a time-saver, but you can make your own to lessen the sodium and fat.
Number of Servings: 4

Ingredients

    1 can 98% fat free cream of mushroom soup
    1 lb. 93% lean ground beef
    1/4 cup chopped onion
    1 egg, slightly beaten
    1/4 cup bread crumbs
    2 tbls. parsley
    1/4 tsp. salt
    2 cups mashed potatoes
    1/4 cup shredded cheddar (or blend) cheese

Directions

Mix 1/2 can of soup, ground beef, onion, egg, bread crumbs, parsley and salt. Press into a 9" pie plate sprayed with cooking spray. Bake at 350 degrees for 25 minutes. Drain off fat. Frost with potatoes. Top with remaining soup and cheese. Bake 10 more minutes.
