Number of Servings: 20

Ingredients

    Flour, white, 1 1/2 cup
    Flax Seed Meal (ground flax), 3/4 Cup
    Oat Bran, 3/4 Cup
    Brown Sugar, 1 cup, packed
    Baking Soda, 2 tsp
    Baking Powder, 1 tsp
    Salt, 1/2 tsp
    Carrots, raw, 1 1/2 cup, grated
    Apples, fresh, 1 Cup grated
    Raisins, 1/2 cup,
    Pecans, 1 cup, chopped
    Milk, 2%, 3/4 Cup
    Egg, fresh, 2 large
    Vanilla Extract, 2 tsp
    2 tsp Cinnamon

Directions

Shread apple and carrots, place in a bowl, add milk, egg, raisins and nuts. Set aside

In separate bowl combine all remaining dry ingredients.

Combine liquid ingredients into dry. Stir until moistened, do not over mix.

Fill greased muffing cups 3/4 full. Bake at 350 for 15 -20 min.

Yields 20 muffins
