Ingredients

Stew:
Chicken Breast, no skin, 400 grams, diced
Carrots, raw, 6 medium, sliced
Celery, raw, 3 stalk, large (11"-12" long), sliced
Hartley's No Bits Apricot Jam, 30 gram(s) (2 tbsp)
Knorr Chicken Stock Cube, 2 cubes
Bisto Original Gravy Powder, 30 gram(s) (2 tbsp)
Birds Eye Country Harvest, Carrot, Cauliflower & Broccoli, 250 gram(s) (more or less as desired)
Onions, raw, 1 large, sliced
Boiling Water, tap, 2 cup (8 fl oz)
Mashed Potatoes:
3-4 Potatoes, raw (Average size), 900 gram(s) diced
Egg Yolk, 1 large
Salt, 1 dash
Pepper, black, 1 dash
Directions
Slice onions, carrots and celery.
Cube chicken into bite-size pieces.
Put saucepan full of water on to heat to cook pototoes (or microwave if desired)
Dry fry chicken and onions in a large/deep saucepan or wok until chicken is browned and onions are soft (or use a few sprays of 1cal extra virgin olive oil spray) (2-3mins)
Whilst frying, dissolve stock cubes in 2 cups of boiling water and and once onions are soft add stock+water into saucepan with chicken.
When boiling, add carrots and celery, and apricot jam.
Add diced potatoes to now boiling water on stove (add some salt to water if desired)
Allow both saucepans to simmer for approx 10 mins, stirring occasionally. When carrots are almost soft, add in frozen mixed vegetables. Simmer for another 2-3 mins.
When all vegetables and chicken are fully cooked and boiling in water add in gravy powder and stir quickly to dissolve and thicken the stew (as more/less gravy as desired) and allow to simmer on stove.
When potatoes are soft remove from stove and mash thoroughly. When smooth, add egg yolk and salt/pepper to taste.
Serve thickened stew with mash immediately and Enjoy :)
