    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Celery, raw, 1 cup, diced
    Parsley, 3 tbsp
    Pepper, black, 1 tsp
    Garlic, 2 cloves minced
    Egg substitute, liquid (Egg Beaters), .25 cup
    Quick Oats .75 cup, cooked
    Ground beef, lean, 24 oz
    Ketchup .25 cup


Serves: approx 6

Preheat oven to 350 degrees.

Combine onion, bell pepper, celery, parsley, pepper, garlic, oats and egg substitute in a large bowl, tossing to moisten oats. Crumble meat over onion mixture, and mix just until blended. Pack mixture into a loaf pan lined with cooking parchment or coated with cooking spray. Brush ketchup over top of loaf. Bake at 350 degrees for 1 hour or until instant-read thermometer registers 160 degrees. let loaf stand in pan 10 minutes before serving.

I baked mine in a muffin tin for equal protions.
