    1 1/2 pound ground chicken or turkey
    4 scallions, thinly sliced
    3 tablespoons chopped fresh ginger
    2 tablespoons fresh lemon juice (1 lemon)
    1 tablespoon paprika
    2 teaspoons ground cumin
    1/2 teaspoon ground cardamom (fresh is best!)
    1/4 teaspoon cayenne pepper
    coarse salt and fresh ground pepper
    vegetable oil
    4 whole wheat pitas (I substituted plain naan for pitas)
    1 cucumber, halved lengthwise and thinly sliced on the diagonal
    1/2 cup fresh cilantro sprigs
    1/2 cup plain low-fat yogurt
    1/2 teaspoon ground cumin
    coarse salt and fresh ground pepper


In a medium bowl, mix ground turkey, scallions, ginger, lemon juice, paprika, cumin, cardmom, cayenne, 1 1/2 teaspoon coarse salt and 1/2 teaspoon pepper; combine with hands. Set aside for the flavors to meld for at least 10 and up to 30 minutes.

To make Cumin Yogurt Sauce, combine plain low-fat yogurt with 1/2 teaspoon ground cumin, coarse salt and fresh ground pepper. Set aside (in the fridge is best).

Make four patties. Heat grill or stove to medium high.

If using grill or stove-top grill pan, moisten a folded paper towel with vegetable oil; grasp with tons and rub over grates or grill pan. Season patties with salt and pepper; grill until opaque throughout.

Prep pita while patties are cooking.

When patties are finished, put a patty, some cucumber slices and cilantro sprigs in pita . Drizzle Cumin Yogurt Sauce on top.
