Introduction

So, I wanted a banana today, but the only one left in the house was frozen, this is what I came up with.

This is so creamy and delicious that you will never realize it's not the "real thing."

Nutritional info is based on a 4 ounce container of blueberry Yoplait light yogurt (100 calorie pack).

I plan on trying this with other frozen fruit/yogurt combinations (PEACH!!), if you try one comment and let me know what you think!

I made this in a blender because I don't have a food processor - if you do have a food processor, you may be able to make this with less or even no milk and it would be ready to eat sooner.

Ingredients

    1- 4 oz container Yoplait Light Blueberry 100 calorie pack, frozen
    1 large Banana, frozen
    1 cup Blueberries, frozen (unsweetened), divided
    1/2 cup skim Milk

Directions

(The day before making this, put a peeled banana and a container of yogurt in the freezer)

Place the container of yogurt (frozen), frozen banana, and 1/2 cup of the frozen blueberries in a blender. Add a little bit of the milk and blend, adding more milk as necessary, until everything is smooth and creamy.

You can slurp this now as a thick smoothie, but to give it that 'ice cream' texture, pour into a shallow container and place in the freezer for 30-45 minutes. Use a fork and stir well, Add the other 1/2 cup of frozen blueberries, stir. Return to the freezer for an additional 30 minutes, stir again. Store in freezer.

Makes about 7- 1/2 cup servings, depending on how big your banana is.

    Tried as written. Then I tried a fat free sugar free vanilla yogurt and a 1/4 tsp of sugar free Jello powder. Stir well, and set in freezer for a hour. I love lemon but any flavor gelatin will work. I think it is divine. Original suggestion from a Diabetes educator who use full fat SF yogurt. - 7/12/11

    This was very good! Not exactly like ice cream, but a nice frozen treat. I used strawberries instead of blueberries, vanilla yogurt, added a T of strawberry preserves and a T of sugar free vanilla syrup. Can't believe I tried this recipe in the winter!!! - 1/17/10
