    8 oz Extra lean ground beef
    1.5 cup Shredded low fat Cheddar cheese
    2 flour tortillas
    1 cup Frozen corn kernels
    1/4 cup salsa


Cook ground beef, stirring to breakup, until no longer pink. Add salsa and corn and mix. Cook until corn is heated through. Add 1 cup of shredded cheese and stir until melted. Place 1/3 of meat mixture into the bottom of a greased round casserole, top with tortilla. Repeat layers finishing off with a meat layer. Top with remaining cheese and bake covered in a 400 degree oven for 35 minutes or until heated through, uncovered for the last 5 minutes.
