A basic french bread. A basic french bread.
Number of Servings: 32


    Six cups flour
    4 tsp bakers yeast
    2 tsp salt
    2 cups warm water


Makes 24-28 slices of french bread in two loaves.

Mix ingredients in stand mixer until incorporated. Then mix for six minutes more to knead. Let rise for one hour or until doubled in size. Form loaves, and let proof in refrigerator overnight or up to 24 hours. Remove from refrigerator and let rest on counter until oven heats up to 400 F. bake for 20 minutes, then rotate pans and bake another 20 minutes.

For brown crust, place a pan with a quarter inch of water in the oven on the rack below the bread.

    The taste of this is really pretty good. The only problem I had was my own inability to get the bread to rise. I realize baking is an art and I'm just learning. - 10/4/09
