    1 1/2 cups sliced carrots
    2/3 Tbls EVOO
    1/2 tsp black pepper
    1/2 cup frozen Edamame
    1/2 cup College Inn Thai Coconut Curry broth


In small skillet, add 2/3 T EVOO. Add carrots. Saute on low-med heat for about 20 minutes. Add black pepper, edamame, and broth. Simmer about 10 more minutes, or until carrots are desired texture.
