Introduction

Ingredients

1 cup Yellow Sweet Corn, Frozen
8 oz Lean Ground turkey, 93% lean
1 Red Bell, diced
1 Yellow Bell Pepper, diced
1 large Onions, chopped/diced
4 tsp Chile Powder
1 tsp Garlic powder
1/4 tsp Sea Salt
1 can Diced Tomatoes, drained (or 2 med. tomatoes-diced)
3/4 cup low sodium Chicken Broth
1 TB Tomato Paste
2 tsp Lite Soy Sauce
1/2 cup BBQ Sauce - Kraft Light
**Whole Wheat Hamburger Buns (not included in nutritional count)
**1/2 cup low fat montery jack chees (not included in nutritional count)
Directions
In large nonstick skillet, brown ground turkey over medium high heat, 3-4 minutes. Add red and yellow peppers and cook for 2 minutes, stirring occasionally.
Add onion and cook for another 2 minutes.
Add in chile powder, garlic powder and salt. Cook 1 minute, stirring occassionally.
Stir in tomatoes, corn, broth, tomato paste and soy sauce. Increase heat to high and bring to a boil. Reduce heat and simmer for 20 minutes.
Stir in BBQ sauce. Simmer 5 minutes more. Remove from heat and let sit a few minutes. Sauce will thicken upon standing.
Serving size - 2/3 c for 6
(or 1/2 c for 8-10)
Serve on buns topped with cheese. I used WW rye bread.
Awesome leftovers. Enjoy!
