Number of Servings: 15

Ingredients

    Use 2 heads of cauliflower
    Cut into chunks and steam 1 1/4 heads
    Put in bowl to cool - once cooled, cut into small chunks
    Steam remaining 3/4 head
    Blend to puree
    Combine two cauliflower mixtures together with 8 small kosher style pickles, cubed,
    8 Hard Boiled Eggs, chopped
    One medium size onion, chopped
    Mix in jar, approx 4 tbl mayo, a squirt of mustard, two tbl sweet relish, with approx. 3/4 cup of pickle juice. Put lid on and shake to make sauce. Add to cauliflower and mix. Add several more tbl sweet relish to taste. If sauce isn't enough, make a little more until you have enough sauce to thoroughly cover when mixed with other ingredients. Salt and pepper to taste.
