Ingredients

    8 oz Self-Raising Flour
    6 oz sugar (could use sugar substitute)
    1 egg
    8 oz Mixed Dried Fruit - can be anything at all - apricots/prunes/sultanas/cranberries/blueberries/currants/pineapple whatever mixture you like.


    1 tsp mixed spice
    1 tsp baking soda

    1 cup of freshly made hot tea

    1 x 1lb loaf tin

    400F for 45 minutes





    Allow the dried fruit to sit in one cupful of hot tea overnight.

    Then add the sugar, flour and 1 egg, mixing well

    Bake in a 2lb loaf tin for about 90 mins at Gas mark 3.

    Slice and eat
