Number of Servings: 18


    2 cups whole wheat pastry flour
    1 tbsp baking powder
    1.5 cups sugar
    .25 cup unsweetened applesauce.
    juice of fresh lemon
    lemon zest from fresh lemon
    1 egg
    2 egg whites
    .5 cup low-fat sour cream
    .5 cup fat free plain yogurt
    2 tsps vanilla
    1.5 cups raspberries


blend apple sauce and sugar. Add lemon zest and stir well. Add yogurt, sour cream, beaten egg and egg whites and vanilla. Blend well. Add flour and baking powder and blend again. Gently fold in raspberries. Bake 20 minutes in a 350 degree oven. Makes 18 medium sized muffins. 1 muffin = 1 serving.
