Number of Servings: 1

Ingredients

    Cooking spray
    1 clove, Garlic minced
    4 oz. ground turkey (lean)
    1/4 tsp oregano
    1/4 tsp cumin
    1/4 tsp cayenne pepper (or more to taste)
    1/4 cup water
    10" Whole Grain tortilla (I like Trader Joe's with Rolled Oats & Flax Seeds)
    1 oz shredded low-fat cheddar cheese

    1/4 cup shredded Lettuce
    1/4 cup chopped red or green peppers
    1/4 cup chopped tomatoes
    (you can add other veggies in the house as well, I like cucumbers and jalapenos)

Directions

Spray a frying pan with cooking spray.
When hot, add garlic and cook for one minute
Add ground turkey, herbs and spices. Cook, stirring, until turkey is browned, about two minutes.
Add water, lower heat so water is just simmering.
Cook, covered for 8 minutes.

Make a tortilla with meat, shredded cheese, and lots of veggies.

This recipe can easily be multiplied to serve a larger number of people. If you do this, you'll need to allow a bit more time for browning the turkey.
