    3 eggs whites
    Plum Tomato ( I used dried tomato)
    3-4 TBS onion (again I used dried)
    1 Wedge Light Laughing cow cheese (any flavor)


Take Laughing Cow wedge out leave on counter to come to room temp.

Combine all other ingredients, pour into fry pan, cook on one side then flip cook on other side, place on plate and spread cheese on cooked egg, fold in half and enjoy!

Thia can also be done in a microwave, except chees will have ot be cut into cubes and cooked with the egg, microwave for 1 minutes, stir and continue to cook for an add'l 45 secs - 1 min.
