Ingredients

    - 2 Frozen Boneless Skinless Chicken Breasts
    - 2/3 Cup OXO Chicken Soup Base
    - 1/4 Cup Dried Chopped Onion
    - 1/2 Cup Long Grain Rice

    - 1/4 Cup Chopped Green Onion
    - 1/3 Cup Chopped Fresh Parsley
    - 1 Medium Onion
    - 5 Medium Stalks Celery
    - 6 Medium Carrots, Skinned
    - 2/3 Cup Corn Kernels

    Serve with Pepper and Crackers

Directions

Heat oven to 400 degrees - Bake chicken from frozen for approx 45 minutes.

In the meantime, stir chicken soup base + dried onion into 4 litres (16.5 cups) of cold water. Bring to a boil. This is a good time to chop up your vegetables.

Once the pot is boiling, add the rice. Allow to boil for 5 minutes before adding the vegetables. Reduce heat to medium and continue to boil for 20 minutes, Then reduce to a low simmer.

When the chicken has finished baking, take it out and chop it into small pieces. Add the chicken and allow to simmer another 10 minutes before serving.

Makes eleven 1.5 cup servings.
