Ingredients

16 oz ground bison/buffalo (beef will work, but it isn't as lean)
2 large portabella mushroom caps, about 5 oz, well cleaned
2 oz boursin cheese
salt and pepper or seasoning salt
Directions
Makes 5 (approx 4.5oz) burgers
Pulse the mushroom caps in the food processor until it's texture resembles that of ground meat, about three 2-second pulses
Gently work the mushrooms into the bison, careful not to overwork or the burgers will be tough
Crumble the boursin cheese in, and work gently until it is distributed evenly
Divide into 5, relatively thin, patties
Season with salt and pepper or seasoning salt
Place them covered with plastic wrap in the regrigerator for at least half an hour
From here, you can either throw them directly on the grill or do what I do:
place the patties on a wire cooling wrack inside a half sheet pan in a 200 degree over for 30 minutes
Finish on the grill or on a grill pan, about a minute a side.
FWIW, I like to grill the buns a little too
