Introduction

What you need
red can lentils 195g (3/4 cup)
onion 0.5, very thinly sliced
garlic clove 0.5 crushed
chicken stock 200ml (1 cup)
medium curry paste ¼ tsp
lemon juice
To garnish: low fat crème fraiche
Torn cilantro leaves

How to do it
Put the lentils (I use can low sodium lentils but you can use dried lentils - 25g) in a saucepan with the onion, garlic, stock and bring to the boil. Reduce the heat; add the curry paste, stir and cover. The lentils and the onion take about 10 minutes to soften add more boiling water if they start to dry out.
Puree half of the soup in a food processor then add the lemon juice to taste. Mix with the remaining soup then turn into bowls, swirl with crème fraiche and scatter with cilantro leave (I skip the cilantro as we do not like it)
