    150g (1-1/4 cup) pecans, broken into pieces
    200g (1 cup) brown sugar
    1/2 cup butter
    1/2 tsp. salt
    1/2 tsp. espresso powder
    1 tsp. baking soda
    2 tsp. vanilla
    1 tsp. butternut, maple or butter-rum flavor
    1 tsp. cider vinegar
    3 large eggs
    240g (2 cups) whole wheat flour
    70g (1/3 cup) sugar mixed with 1 tsp. salt


Preheat oven to 375. Place pecans in a single layer in a pan, and toast till they've darkened just a bit and smell toasty, about 5-7 minutes. Set aside.
In a large bowl, combine brown sugar, butter, salt, espresso powder, baking soda, vanilla and vinegar and beat for about 2 minutes. On low speed add the eggs. DO NOT BEAT. Just mix a little. Stir in flour until smooth. Stir in the pecans. Drop by cookie scoopfuls into the sugar-salt mixture. Toss or roll to coat. Place on a lightly greased baking sheet. Flatten slightly. Bake for about 9 minutes or until just done. Remove from pan and place on counter top to cool. Makes about 35 cookies.
