    5 large potatos (about 4 lbs), peeled and cubed
    1 bag (2 cups) cheddar cheese, shredded
    1 1/2 cups celery, chopped
    1 1/2 cups onion, chopped
    5 cups milk
    4 cups water
    1 tbsp butter
    1 tbsp salt


Saute onion and celery in butter for 5-6 min. until nearly tender. Add rest of ingredients except cheese. Bring to a boil. Reduce heat and simmer for about 20 min. until all veggies are tender. Remove from heat. With a potato masher, mash some of the potatoes to make the soup thick. Cool for a few minutes then add cheese and stir until melted.
