Number of Servings: 8


    1 tbsp butter
    4 cups thinly sliced zucchini
    1 cup chopped onions
    2 tbso dried parsley
    1/2 tsp salt
    1/2 tsp pepper
    1/4 tsp garlic powder
    1/4 tsp dried basil leaves
    1/4 tsp dried oregano leaves
    2 eggs well beaten
    8 oz (2 cups) shredded muenster or mozzeralla cheese
    1 9 inch pie crust
    2 tsp prepared mustard


heat oven to 375. melt butter in large skillet. add zucchini and onions, cook 6-8 mins or until tender. stir in parsley, salt, pepper, garlic, basil & oregano.
In a large bowl combine eggs & cheese. mix well. add cooked veggie mixture, stir to mix.
spread mustard on pie crust. pour egg mixture evenly in crust.
bake at 375 for about 26-30 mins. done when knife inserted near center comes out clean. let stand a few mins before cutting.
