    2 boneless, skinless Chicken Breasts (grilled and chopped)
    1 15 oz. can Black Beans (drained and rinsed)
    3 medium Scallions, chopped
    3 tbsp chopped, fresh Cilantro
    juice of 1 lime
    1 large Onion, chopped
    1 can Yellow Sweet Corn (12 oz)
    4 cups shredded Romaine Lettuce
    1 tomato, seeded and chopped
    1 Haas avocado, seeded and chopped
    Salt & Pepper to taste


Grill chicken and allow to cool. While chicken is cooling, prep all other ingredients. Place everything (except lettuce) in large salad bowl. Add black beans and lime juice. Place bowl in fridge and marinate in own juices for 30 min. Remove salad bowl from fridge. Add chopped lettuce. Toss and serve with a tablespoon of salsa.
