    3 tomatillos, cut into pieces
    3 tomatos, chopped
    1 large onion, chopped
    1 garlic clove, chopped
    3 chicken breasts
    1 carton Low-Fat or Non-Fat sour cream (I used 1 cup of each)
    1 jar jalapenos
    1 package shredded Mexican Cheese
    1 package Multi-Grain Tortillas


Saute' onions and tomatos in 1 Tbsp olive oil.
Cook Chicken Breasts in Nu-Wave oven for best result.
Cut cooked chicken into pieces and add to onion, garlic & tomato mixture. Set Aside.

In a blender, Mix sour cream and tomatillos until smooth.

In each tortilla, spoon in 1/10 th chicken mixture and add 1 oz of cheese. Wrap tortilla and put in casserole dish folded side up. Put a toothpick in tortilla. Repeat for 10 tortillas.

Pour sauce over enchilada. Bake at 400 for 20 minutes.

Serve with fruit and a vegetable to make a complete meal.
