Number of Servings: 4


    3 boneless skinless chicken breasts-chopped into cubes
    1 can Campbell's 98% Fat Free Cream of Chicken Soup
    3/4 cup long grain white rice uncooked
    1/2 cup fresh corn (frozen is ok)
    2 cloves garlic minced
    2 TBS chopped onion
    dash of celery salt
    dash of pepper
    1 tbs canola oil
    1/2 cup fat free cheddar cheese, shredded


~In a casserole dish dump in whole can of soup and 1 1/2 cans water mix well.

~Add rice and corn. set aside

~In a large skillet heat oil.
saute chicken with garlic and onion til lightly brown.

~add chicken/garlic/onion to rice mixture.
stir mixture.
season with celery salt and pepper.

cover with foil
bake at 375 for one hour or until rice is tender.

remove from oven, sprinkle with cheese, let stand 10 minutes.

makes 4 servings
