    2 cups Hodgson Mills Insta-Bake Whole Wheat Baking Mix with Buttermilk
    2 eggs
    1-1/3 cups nonfat milk
    2 tbsp vegetable oil
    1 tbsp Splenda
    1 tsp vanilla extract


Combine all ingredients (adding more milk if needed for desired consistency). Spray hot griddle with butter flavored cooking spray and heat to medium. Pour 1/4 cup batter onto griddle and cook until dry at edges and bubbles begin to form on surface. Turn and cook until golden brown.
Makes 8 servings (2 pancakes each serving).

*I make a batch on weekends and then freeze in individual servings and pop in the microwave during the week for a quick breakfast*

*These are great with sliced strawberries sweetened with Splenda and heated, then topped with fat free vanilla yogurt*
