    salt and pepper to taste
    1 1/2 lbs small red potatoes
    1/3 cup 2% milk
    6T butter
    3/4 c low fat buttermilk


Bring 2 quarts of water to a boil. Clean and wash your potatoes and cut them as desired. The smaller they are cut the faster they will cook. Add them to the water and bring it back to a boil. Lower the heat and simmer uncovered 10-15 minutes. When you stab them with a fork and they slide off easily they are ready. Melt your butter with your milk and buttermilk in a sauce pan.

I cheat and mix it all in my stand mixer! Makes 4-5 servings.
