Introduction
Adapted from healthdiscovery.net recipes. I made this less sweet than the original recipe. I've also put the spice proportions that I like, and have used real eggs instead of egg beaters. Ingredients

1 can pumpkin
1 can evaporated skim milk
3/4 cup egg substitute or liquid egg whites, or 3 fresh egg whites
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1 tsp vanilla extract
1/2 cup Splenda for baking (measures like sugar)
Cooking Spray
Directions
Preheat oven to 400 degrees F.
Combine all ingredients except Grape Nuts and beat until smooth.
Spray 9" pie pan with cooking spray.
Sprinkle Grape Nuts evenly into bottom of pie pan.
Pour pie mixture into pan.
Bake at 400 for 15 minutes, then at 325 for 45 minutes or until a knife inserted in center comes out clean.
Serves 8.
Counts as a vegetable serving!
One Weight Watchers Point per serving.
