A light salad for when you have everything else but the lettuce! A light salad for when you have everything else but the lettuce!
Number of Servings: 6


    Red Ripe Tomatoes, 2
    Mushrooms, fresh, 1 cup, pieces or slices
    Green Peppers (bell peppers), 0.5 cup, chopped
    Croutons, seasoned, 3 cup

    Cider Vinegar, .5 cup
    Garlic, 3 clove
    Olive Oil, Extra Virgin, .5 cup


Chop all veggies into bite size pieces. Toss in bowl with croutons (best with homemade croutons). Whisk dressing ingredients in small bowl with a little salt and pepper. When flavor is to your liking pour over salad ingredients. Toss to coat all with dressing. Allow to sit for a bit before serving so that croutons can soak up some of the dressing. You can toss in a little fresh parsley or basil for a nice addition to the flavor.
