    5 large fresh eggs
    1 c flour
    1 c almond/any milk
    4 T butter
    1 T olive oil
    1 t salt


Makes 2 very generous servings. Serve with wedge of fruit.
mix eggs and salt with wisk, add flour and milk, mix till not lumpy. Pour into hot pan with 1 T olive oil, slowly stir as mixture browns adding small amounts of butter. Is done when firm and brown.
drizzle with pure maple syrup and enjoy.
