2 large tomatoes diced
Half an onion thinly sliced
1 red bell pepper, seeds removed, thinly sliced
3 cups of quick cook Rice (brown if you're feeling healthy)
1 tbsp Olive Oil
1 tbsp Butter
Vegetable Broth/Stock - 2 cups
White Wine - half cup
Saffron - large pinch
8 Prawns
4 baby squid/calamari tubes (tentacles look great if you can get them)
12 Mussels
12 Small clams or cockles
Flat Leaf Parsley (Italian) - Handful coarsley chopped and sprigs for garnish.
Directions
Heat butter and oil in large non stick frying pan.
Add onions, red pepper, tomatoes and saffron. Cook for 3 mins till onions are soft.
Add seafood, rice and wine. Simmer for 3 minutes. Then add the vegetable stock and simmer for a further five minutes.
Stir in the chopped parsley. Make sure to remove any clams, mussels or cockles that have not opened during cooking (these could make you sick if you eat them).
Pile on to plates garnished with lemon wedges and sprigs of flat leaf parsley.
