    120g (1-1/2 cups rolled oats
    110g (1 cup) oat bran
    60g (1/2 cup) whole wheat flour
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 cup butter, softened
    140g (1 cup) sucanat or brown sugar
    3 large eggs
    1 T. vanilla
    1 cup Hershey's special dark chocolate chips
    80g (1 cup) coconut


Preheat oven to 375. In a bowl, combine first seven dry ingredients. In a mixing bowl, beat butter and sucanat for about 1-2 minutes. On low speed add eggs and vanilla. Do not beat! Stir in dry ingredients until combined. Stir in chocolate chips and coconut. Drop by cookie scoopfuls onto lightly greased cookie sheets. Bake for 10 minutes or until set. Remove from pan and cool on counter tops. Makes about 39 cookies.
