Introduction

I got this basic recipe from a Taste of home book and then I use whatever crackers I have on hand. My husband loves them. I got this basic recipe from a Taste of home book and then I use whatever crackers I have on hand. My husband loves them.

Ingredients

    -33 Ritz crackers crushed
    -65 Zesta whole wheat crackers crushed (the total cracker amount is 3 C, I just didn't have enough Ritz)
    -2 large eggs, slightly scrambled
    -1 C skim milk
    -2 T or 1 oz lemon juice
    -1/4 t black pepper
    -1/4 t salt
    - 2 t finely chopped onion
    -2 cans Chicken of the Sea Pink Salmon

Directions

--Crush and measure the crackers in a large bowl. All all other ingredients, except the salmon. Mix well then add the salmon, making sure to break up the salmon bones.

--Using a #50 scoop (about a Tablespoon size) scoop into the skillet over med/high heat about 10 at a time. Wetting your fingers, press each down to make them flat. Cook about a minute or so until brown and then flip to brown the other side. (No oil needed) You may also put these in a preheated oven at 350 degrees for 30-35 minutes, flipping half-way through.

--Makes about 50 little patties.
