Ingredients

    Tofu, firm, 150 grams
    Peppers, sweet, red, fresh, 1.5 medium (approx 2-3/4" long, 2-1/2, cut in chunks
    Red Onion, raw, 1 small, cut in wedges
    Celery, raw, 3 stalk, medium (7-1/2" - 8" long), slice
    Spinach, 2 cups
    Garlic, 3 clove, minced
    Olive Oil, 4 1tsp (remove)
    *Hoisin Sauce, 1 tbsp
    Jams, preserves, jelly, 1 tbsp (marmalade or plum)
    Soy Sauce, 1 tbsp

    Opt: Steamed Brown Rice (not included in nutritional counts)

Directions

Drain excess water from tofu and cut into cubes. Heat oil in pan. Stir fry tofu until lightly browned. Meanwhile whisk soy sauce, hoisin sauce and marmalade together in a small bowl. Set aside. Add the rest of the ingrediants to the pan and stir-fry until tender adding the spinach at the last minute. Add soy sauce mixture, cover ands simmer a few minutes, Serve over brown rice. Makes two satisfying portions.
