    1 lb boneless, skinless chicken breast
    1 package lower sodium taco seasoning
    1/4 cup water
    1 can black beans, drained, rinsed
    1 can corn, drained
    4 oz 2% velvetta, cut into cubes
    1 small can chopped green chilies
    8 tortillas
    1 sm can enchilada sauce


Cut chicken into chunks and cook in skillet until no longer pink. Add taco seasoning and water to chicken, simmer for 10 minutes.
Spray 9x13 in. baking dish with non stick cooking spray.
Place chicken, black beans, corn, velvetta, and green chilies into all 8 tortillas. Roll each one up and place in prepared dish.
Pour enchilada sauce over the stuffed enchiladas.
Bake for 20 minutes at 350 degrees F.
