Ingredients

    5 medium bell peppers
    11/2 pound of ground turkey
    1 cup of raw chopped onion
    2 garlic cloves minced
    2 tsp of chicken bouillon
    1 ts salt
    1/4 tsp pepper
    1tsp garlic powder
    1 cup cooked brown rice
    1 cup low fat shredded cheddar cheese
    1/2 cup salsa
    1/2 cup reduced fat sour cream
    1 cup diced tomatoes
    1 tbsp of soy sauce
    1 cup of water (hot)

Directions

Preheat the oven to 350 degrees. Cut the peppers in half lengthwise. Remove the seeds and ribs inside the pepper.

In a skillet, saute onions until translucent, add garlic, ground turkey, salt, pepper and garlic powder to your skillet with the onions. Saute until turkey is cooked. Add rice, cheese, sour cream, tomatoes and soy sauce. Mix together well and stuff in the pepper.

In a small bowl, mix together the cup of hot water & 2 tsp of chicken bullion. Pour mixture into a shollow casserole dish, big enough to fit the peppers. Place stuffed peppers in the dish. Cover with foil and bake for 40 min.

Remove the foil spoon juice from bottom of the dish over the peppers and cook uncovered for anothe 15 to 20 minutes.
