Ingredients

    1 Boca Burger Patty
    1/4 cup of Black Beans
    1/4 cup of Canned Corn
    2 Cups of Shredded Lettuce
    2Tbsp of Salsa
    2Tbsp of Fat Free or Light Ranch Dressing
    *Optional- Light or Fat Free Sour Cream
    *Optional- Light Shredded Cheese
    *Optional-Light Baked Tortilla Chips

Directions

Makes 1 serving.
Heat up the Boca burger for about 1min 30 seconds and then cut up the burger. Microwave the black beans and corn till hot. Cut up bell pepper into strips. Serve all the ingredients over a plate of shredded lettuce. Then top with salsa and fat free ranch dressing. Or if desired it can be served with fat free sour cream and/or light shredded cheese. Crunch of some guiltless gourmet or light baked tortilla chips and serve with salad or don't use chips at all!

    Use Boca black bean burgers or an even better taste. Also make your ranch dressing by adding a packet of ranch to fat free sour cream - it tastes much better than store bought bottled version - 1/18/12

    Yum!! I didn't use the ranch dressing, salsa was plenty of a topping for me, but this salad was great (and I don't even like salad all that much). Very creative, VERY filling--definitely something I'll make again. And great options for variety! - 1/6/12
