    Non-stick cooking spray
    4 8-inch Tortillas (LaTortilla Factory low carb whole wheat are great!)
    3.5 oz. garlic or spicy Hummus
    6 oz. cooked shrimp
    6 oz. jar marinated artichoke hearts
    4 oz. package Feta cheese (crumbled)


Coat one side of each tortilla with cooking spray and place (sprayed side down) on work surface. Spread with hummus. Top half of each tortilla with shrimp, artichoke hearts, and cheese. Fold in half, pressing lightly.

Heat non-stick skillet or griddle over medium heat for 1 minute. Cook quesadillas, 2 at a time for 4-6 minutes or until browned and heated through, turning once.
