    Macaroni Pasta, dry 6 oz apx. 2.25 cups dry
    Cheddar and Swiss Cheese, 3/4 cup, shredded
    Milk, 1%, 3/4 cup
    Canola Oil, .5 tbsp
    Flour, white 1 tbsp
    Mushrooms, 1.5 cup sliced
    Onion, 1 medium diced
    Tomatoes, 2 medium diced
    Parmesan, 2 tbsp


Preheat oven to 350.
1. Boil pasta for 8 minuts.
2. Saute onion in .5 tbsp of oil until soft. Set aside the onion, keeping the oil in the pan.
3. Add and heat the remainder of the oil rest of the oil. Add flour. Mix until it forms a paste. Add milk. While stiring, over low bring mixture to a low boil. Remove from heat. Stir in cheese until melted.
4. Stir in cooked pasta. Mix in mushrooms, onion, and tomatoes.
5. Pour in to a greased baking dish. Sprinkle parmesan on top.
6. Bake 30-40 minutes in a 350 degree oven.

You can use cheddar cheese, which I think tastes better, instead but using mozzarella increase the protein and lowers the fat content.
