    2 1/2 cups SR Flour
    2/3 cup Brown Sugar
    100g lite Butter, melted
    1 cup milk, non fat
    1 egg, lightly beaten

    1 1/2 cup of stewed apples or other type of fruit you want

    Crumble Topping:
    1/4 cup plain Flour
    1/3 cup brown sugar, firmly packed
    2 tblsp oats
    1 tsp grated lemon rind
    30g lite margerine/butter, melted


Makes 12

1. Grease 12 hole muffin pan and pre-heat oven to moderately hot oven (200 degrees)

2. Sift dry ingredients into large bowl, stir in remaining ingredients (Hint: separate egg and whip whites to add last for a light muffin, particularly if you replace flour for gluten free flour option)

3. Half-fill pan with muffin mix, spoon filling into wells, top with remaining muffin mix, spread carefully to cover filling. (Hint: you can use a icing pipe to make it easier if want)

4. Sprinkle with crumble topping, press gently onto muffin mix.

5. Bake in oven for about 20min

Crumble Topping: combine all ingredients in small bowl, mix well.
