Introduction

Ingredients

    10 oz Ground Chicken Breast
    1/3 cup Fat Free Ricotta Cheese
    3 oz shredded Mozzarella Cheese, part skim milk
    1.5 oz Grated Pecorino Romano
    1 1/2 cups Broccoli, chopped (quick steam in microwave)
    4 oz Ronzoni Smart Taste Rigatoni (cook to package directions)
    Garlic, 3 cloves (minced)
    Basil, 8 leaves (chiffonade)
    2 tbsp chopped Shallots

Directions

Preheat oven to 375.

In a non-stick skillet, on medium heat, add shallots and garlic add the ground chicken and cook through. Add any italian herbs that you like on this step, I like to add a little oregano (not too much).

Cook pasta according to package directions. Either give the broccoli a quick steam in the microwave or a quick dunk in the boiling pasta water.

In an oven proof baking dish, spray with non stick cooking spray and toss together the cooked chicken mix with the pasta and broccoli, adding in 3/4 of cup of fat free ricotta cheese and 3/4 of the mozzarella.

Top with remaining mozzarella and pecorino cheese.

Bake for about 25 minutes or until heated through and crusty on top.
