Introduction

The best of spring! The best of spring!
Number of Servings: 4

Ingredients

    8 oz. wheat pasta
    1 lb. asparagus, tough ends snapped off
    1/2 c. chopped green onions
    3 T. lemon juice
    1 T. lemon zest
    1 T. butter
    2 eggs
    3/4 c. milk
    fresh grated nutmeg

Directions

Bring a large pot of water to a boil. Add pasta and cook 4 minutes. Stir asparagus into boiling water and cook pasta and asparagus 2 more minutes (or till pasta is done).

While pasta is cooking, melt butter in large saucepan. Saute green onions, zest and lemon juice about 4 mintues, till liquid begins to evaporate.

Beat egg and milk together.

Drain pasta and asparagus. Stir egg, milk, pasta, and milk into green onions. Stir well to coat, and cook till thick, about 2 minutes.

Serve topped with grated nutmeg, salt, & pepper. May also top with grated parmesan cheese.
