Use any veggies you like, but I like these the best...sometimes I add mushrooms.

Ingredients

    2 stalks celery
    1 medium zucchini
    0.5 cup onion
    0.5 medium red pepper
    1 clove garlic, minced
    oil pan spray

    28 oz canned diced tomatoes
    5.5 oz tomato paste
    2 tbsp basil pesto
    50 grams black olives, sliced

    Add fresh basil, oregano, pepper and salt to taste

Directions

Chop celery, zucchini, onion and red pepper (or use food processor).
Fry veggies with garlic until softish
Add tomatoes, prepared tomato paste and sliced olives
Heat at medium or higher until bubbling then simmer until ready to eat.
