Ingredients

    three chicken thighs and four drumsticks, skin removed
    two tbsp tomato paste
    1 cup of tomato sauce
    dried oregano
    garlic
    thyme
    onion powder
    salt
    6 tbsp shredded fat free mozzarell cheese
    3 tbsp grated parmesan topping

Directions

heat cast iron skillet sprayed with nonstick. cook chicken on one side for five minutes, turn over. spread tomato sauce mixed with paste and spices on top, then sprinkle with cheese. cook until chicken is done...cheese will be melted.
