Ingredients

2 cups steel oats
4 large egg yolks
2 ripe bananas
2 1/4 c heavy cream
1 T vanilla
3 T agave nectar
8 t sugar
Directions
Prepare steel oats per instructions. I make mine drier for this recipe. Pre heat oven to 300.
Peel bananas and cut into thirds
In sauce pan, combine cream, bananas, agave; cook stirring until steam rises. About 4-5 minutes.
Remove from heat and let stand 15 minutes.
In a bowl beat egg yolks and vanilla. Strain cream and discard bananas. Pour cream into yolks a little at a time to temper.
Divide prepared oatmeal among 8 ramekins, filling no more than 2/3 full. Pour cream mixture over top to fill line.
Line a baking dish with a kitchen towel. Place ramekins in pan and fill with hot water halfway up sides. Bake for 30 minutes.
Sprinkle 1 t sugar onto and, with kitchen flame, melt sugar until lightly browned. Serve immediately.
If you wish to store them, they can be reheated in the microwave for 1 minute. But don't melt the sugar until you will serve them.
