    1 C. Regular Oats, toasted
    1 whole egg + 1 egg white
    3/4 C. Light Brown Sugar
    1 tsp. Vanilla
    1 tsp. Cinnamon
    1/4 C. Pecans or Almonds
    1/2 C. Craisins


Heat oven to 325 degrees.

Immediately place oats on a foil-lined cookie sheet in the oven to toast.

Beat eggs and sugar in a medium mixing bowl. Add vanilla, cinnamon, and flour. Stir to combine.

Add nuts, Craisins, and toasted oats. Stir to combine and let rest. Spray cooking spray onto the hot cookie sheet. Then, spread the granola mixture onto the cookie sheet and place in the oven.

Bake 20 to 25 minutes, stirring halfway through. The granola may stick a bit because there is no oil in the mix, but just scrape it off the foil and it will finish baking perfectly.

Serves 12 to 14 (two to three tablespoons)
