    1 3/4 cup of flour
    1/4 cup whole wheat flour
    1/4 tsp. salt
    1/8 tsp cinnamon
    1/8 tsp nutmeg
    2 eggs
    1 cup of sugar
    1/2 cup soy milk
    1/2 cup applesauce
    1/2 cup of orange juice
    2 tbsp grated orange rind


Combine all dry ingredients including orange rind, set aside. Beat eggs slowly adding sugar, beat on medium speed for about 2 minutes until mixture is thick and honey colored. Add half of dry ingredients and mix. Add orange juice, applesauce, and soy milk, mix on low speed. Add remaining dry ingredients beat just until combined. Pour batter into greased muffin pan (12 muffins). Bake in oven preheated to 350 degrees for 15 - 20 minutes. To check if muffins are done toothpick inserted into muffin should come out clean.
