Introduction

Ingredients

    14 oz. of extra firm tofu
    2 Tblsp extra virgin olive oil, divided
    4 tsp garam masala
    2 tsp, sea salt
    3 medium garlic cloves, minced
    1 cup sweet onion, diced
    2 medium plum tomatoes
    2 tsp ground ginger
    12 oz. frozen spinach, defrosted
    1/2 cup Fage Greek Yogurt, fat-free

Directions

Chop tofu into small cubes. Combine with 1 tablespoon of the vegetable oil, 2 tsp. of the garam masala, and 1 tsp. of salt. Heat a large frying pan over medium-high heat and add 1 tablespoon of the oil. When it is hot, add the tofu in a single layer and cook until browned. Transfer to a plate with paper towel to absorb extra oil. Heat remaining oil in same frying pan. Add onion and cook until onion is transluscent. Stir in garlic, tomatoes and ginger and cook about 2 additional minutes. Add spinach in handfuls, stir frequently, and cook until spinach is very wilted and liquid is cooked away. Stir in tofu and heat for about 1 more minute. Remove from heat. Stir together remaining salt, garam masala, and yogurt and add to spinach mixture. Stir well and serve. 4 servings.
