Ingredients

    1/4 c carrots
    1 sm zucci squash
    10 strips yell pepper
    3 tbl diced onion or 1/4 sm onion
    2 c br rice........2c water dash salt 1 c rice

    With 1 table spoon olive oil sauttee veggies.
    Cook til tender and carmely.
    Add water bring to boil,add rice, coverwith lid cook about 30 min or til rice is tender.
    makes about 5 serv about 1/2 c ea
