Number of Servings: 7


    1 tbsp olive oil
    1 medium onion- chopped
    1 2 lb head of cauliflower- chopped
    1/3 cup shredded Parmesan or Asiago cheese
    1/4 cup light sour cream
    1/2 cup 1% milk
    1/4 teaspoon nutmeg
    sald and pepper to taste


Heat olive oil in dutch oven. Add onion and sautee in olive oil until soft- about 5 minutes. Add cauliflower and cook for 5 minutes, stirring occasionally. Add broth, cover and simmer for 15 minutes or until soft. Puree the cauliflower in batches in food processor or with a hand blender. Mix in sour cream, milk, cheese and nutmeg. Add salt and pepper to taste. Heat and enjoy!
